Bruno de Tastes winemaking is in keeping with French Winemaking tradition and know-how together with New World technology.

Grapes are hand harvested and crushed immediately and pressed in traditional Basket Press, The juice is then settled for Debourdage at 2C. for at least 48 Hours.

 
 

Fermentation takes place at 15 C. constant with a secret selection of Yeast Strain added for each wine. No Sulphur Dioxide is used until after the fermentation is completed.

The Chenin Blanc and Viognier are never wooded, but are kept on the Fine Lees, after a first Racking , for several month.

The Chardonnay and the Noble Classic undergo a subtle wood aging for a short period.
The White Wines are usually bottled after 8 months.

The reds are de-stemmed and placed in specially designed open stainless steel fermenters , where fermentation takes place at 20C.

Vatting of the reds varies from year to year but is never less than 2 weeks and can go for up to 4 weeks. After vatting a light pressing is done and the wine settles and undergoes malolactic fermentation in closed stainless steel tanks at between 15 and 18C.

After a month or so the wines goes into French Oak Barrique for between 15 and 24 months.

Shiraz 2001

Grapes from non-irrigated 50 to 60 year old vines, give a brilliant deep red color with blackberry, spicy, clove aromas. Strong fruit and spice flavor on the palate followed by soft tannin. Very good length on the finish. Fuller bigger wine.
Cellar 12 to 15 years.






Cabernet Sauvignon - Merlot 2002

Blend of Cabernet Sauvignon and Merlot wth a touch of Cab Franc for fruitiness. This traditional Bordeaux Blend shows aromas of red cherries and mint with a hint of cigar box and chocolate. The fruity palate is well balanced with acidity, the Merlot component soften the fine tannins.
Cellar 10 to 12 years.






Noble Classic 2004

Not a "sticky" style, but a French style of stunning dessert wine or aperitif. Made from very late-picked Muscat. Deep golden color. Aromas of fresh orange blossoms, apricot, almond, with a hint of oak. A huge, luscious palate, with a full, round body. Very well balanced with clean acidity leaving a long clean finish. Serve Cold.
Cellar 18 to 20 years.






       

Chardonnay 2004

 

Well we've done it, our first unwooded Chardonnay, but don't expect something light and boring, this is quite full bodied with elegant flavours, crisp acidity and long long finish.                                                        
Cellar 6 to 8 years.







Viognier -Marsanne 2004

Rare white grape originating from the North of the Rhone Valley, totally unwooded, aromas of apricot, orange peel, almond and fennel seed. Rich full body, round full palate with a spicy lingering finish.
Serve Room Temperature.
Cellar 6 to 8 years.






Chenin Blanc 2001

Always an amazing wine - maybe the best varietal The Swan Valley has to offer. The nose jumps at you with aromas of passionfruit, apple and banana. Full creamy palate, the fruit follows through with a crisp flinty flavor, good length. Unwooded.
Cellar 4 to 5 years.






Vin Doux 2004

Made from late harvest Semillon blended with Muscat Off dry, fruity flavours balanced with crisp acidity and a crisp dry finish that lingers on the palate. Perfect with curries and spicy foods or summer fresh fruits. Drink now... VERY COLD.
